Lentil Soup |
Ingredients:
- 1 cup _____________dried lentils, rinsed and picked over
- 2 __________________cloves garlic, minced
- 1 medium_________ onion, diced
- 1 medium _________carrot, diced
- 1 medium_________ celery stalk, diced
- 1 medium_________ potato, diced
- 1 tablespoon______ tomato paste
- 6 cups _____________water
- 1 __________________bay leaf
- 1 teaspoon ________dried thyme
- Salt and pepper ___to taste
Instructions:
- In a large pot, heat some oil over medium heat. Add the garlic, onion, carrot, celery, and potato and cook until the vegetables are softened, about 5-7 minutes.
- Stir in the tomato paste and cook for an additional minute.
- Add the lentils, water, bay leaf, and thyme to the pot and bring to a boil.
- Reduce the heat to low and simmer, covered, until the lentils are tender, about 30-40 minutes.
- Remove the bay leaf and season the soup with salt and pepper to taste. Serve hot.
- Optional additions: You can also add some diced ham or bacon to the soup for added flavor, or garnish the soup with some fresh herbs or a dollop of sour cream before serving. Enjoy
