Shortcake With Strawberries, |
Ingredients:
All-purpose Flour --------------------------- 2 cups
Granulated Sugar -------------------------- 1/3 cup
Baking Powder ------------------------------ 2 teaspoons
Salt ------------------------------------------------ 1/2 teaspoon
Unsalted Butter ------------------------------1/2 cup, cut into small pieces
Heavy Cream --------------------------------- 2/3 cup, plus more for brushing the top
Strawberries------------------------------------2 cups, hulled and sliced
1/4 cup granulated sugar
Whipped Cream ------------------------------for serving (optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, whisk together the flour, 1/3 cup sugar, baking powder, and salt.
- Cut the butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the heavy cream until a dough forms.
- Turn the dough out onto a lightly floured surface and knead gently.
- Roll the dough out to about 1/2 inch thickness and cut into rounds using a biscuit cutter or a glass.
- Place the rounds on a baking sheet lined with parchment paper. Brush the tops with a little bit of heavy cream.
- Bake for 12-15 minutes, or until the shortcakes are lightly golden.
- While the shortcakes are baking, mix the sliced strawberries with the 1/4 cup sugar. Let them sit for about 10 minutes to release their juices.
- To assemble the shortcakes, split each shortcake in half horizontally. Spoon some strawberries and their juices onto the bottom half, and place the top half on top.
- Serve with a dollop of whipped cream, if desired.
