Healthy Muffins |
Ingredient
Oats Rolled ----------------------------- 2 cups
Almond Flour -------------------------- 1 cup
Banana 2 medium ripe ------------ 1/2 cup (mashed)
Unsweetened Almond milk ------ 1/2 cup
Eggs large --------------------------------- tow
Pure Maple syrup --------------------- 1/4 cup
Baking powder ------------------------- 2 tsp
vanilla extract ------------------------------- 1tsp
Cinnamon. -------------------------------------1/2 tsp
Salt ------------------------------------------------1/4 tsp
mixed berries --------------------------------1 cup(fresh or frozen)
Instructions:
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease the cups.
In a large bowl, combine the oats, almond flour, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the mashed bananas, almond milk, eggs, maple syrup, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the mixed berries.
Spoon the batter into the muffin cups, filling each about three-quarters full.
Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
