Recipe for Hot Cocoa Cookies that you can try:
Ingredients:
Unsalted Butter _______ 1 cup, at room temperature
Sugar _______________ 1 cup granulated
Eggs ________________ 2 large
Vanilla Extract _________ 1 teaspoon
All-Purpose Flour _______ 2 cups
Cocoa Powder _________ 2/3 cup unsweetened
Baking Soda ___________1 teaspoon
Salt __________________ 1/2 teaspoon
Hot Cocoa Mix _________ 2 tablespoons (powder)
Chocolate Chips ________ 1 cup semi-sweet
Mini marshmallows (optional)
Instructions:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs and vanilla extract, and beat until well combined.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and hot cocoa mix.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the chocolate chips.
Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
Optional: Press a few mini marshmallows into the top of each cookie.
Bake for 12-15 minutes, or until the edges are firm and the centers are slightly soft.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
