Ingredients
- Dried Beans _____________ 1cup (red & white)
- Red Lentil _______________ 1 cup
- Fresh Mix Vegetables ____ 1 cup ( Finely chopped)
- Rice _____________________ 1/2 cup
- Frozen Corn _____________ 1 cups
- Dried Parsley ____________ 1/4 cup
- Potato ___________________ 1 cup ( chopped )
- Spinach _________________ 1cup ( chopped )
- Garlic ___________________ 3 clove
- Onion ___________________ 1 large
- Celery ___________________ A quarter
- Dried Oregano __________ 1 teaspoon
- Vegetables Broth ________ 2 cups
- Paprika Powder _________ 1 teaspoon
- Black Papper Powder ____ 1/2 teaspoon
- Salt ______________________ to taste
- Cumin Powder ___________ 1/2 teaspoon
- Coriander Powder _______ 1 teaspoon
- Tomato Paste ____________ 1/2 cup ( or )
- Stocks Or Water __________ 4 cups
- Olive Oil _________________ 1 tablespoon
Instructions:
- Heat the olive oil in the instant pot over medium heat. Add the onion, garlic, mixed vegetables, and celery and cook, stirring often, until the vegetables have softened, about 5 minutes.
- Add the cumin, paprika, coriander, oregano, salt, and pepper and stir to combine.
- Add the vegetable broth, tomatoes, lentils, and corn and stir to combine.
- Secure the lid and set the valve to “sealing.” Press the “manual” button and set the timer to 8 minutes.
- When the soup is done cooking, manually release the pressure by turning the valve to “venting.”
- Stir in the parsley and serve hot.
