Ingredients:
Cooked Shredded Chicken ___ 4 - 5 ounces
Shredded Carrots ____________ 1/2 cup
Celery Chopped ______________ 1/2 cup
Garlic Minced _______________ 2 tablespoons
Soya Sauce __________________ 2 tablespoons
Rice Vinegar _________________ 2 tablespoons
Sesame Oil ___________________ 1 teaspoon
Ground Ginger _______________ 1/2 teaspoon
Spring Roll Wrappers ________ 10 - 12, 8 inch
Water ______________for sealing the wrappers
Instructions:
- In a large bowl, combine the chicken, carrots, celery, garlic, soy sauce, rice vinegar, sesame oil, and ground ginger. Mix until everything is evenly distributed.
- Take a wrapper and place it on a clean work surface. Place 2-3 tablespoons of the filling in the center of the wrapper.
- Fold the top and bottom of the wrapper over the filling. Fold in the sides of the wrapper to create a sealed package.
- Wet your finger with a bit of water and run it along the edges of the wrapper to help seal it.
- Place the wrapped spring roll on a parchment-lined baking sheet.
- Repeat with the remaining wrappers and filling.
- When you are finished, preheat the oven to 375 degrees F.
- Bake the spring rolls for 15 minutes, or until the wrappers are golden brown and crispy.Serve warm with your favorite dipping sauce.
