 Here's a simple recipe for the vegetable roasting recipe:


Ingredients:


Mixed Vegetables ______________1 lb (450 g)

such as carrots, zucchini, bell peppers, onions, and/or broccoli

Olive Oil _____________________2 tablespoons

Salt _________________________ to taste

Black Pepper _________________ to taste

Optional: fresh herbs such as thyme or rosemary


Instructions:


Preheat your oven to 400°F (200°C).


Cut your vegetables into bite-sized pieces, making sure they are roughly the same size so they cook evenly.


Place the vegetables in a single layer on a baking sheet lined with parchment paper or aluminum foil.


Drizzle the olive oil over the vegetables, and season with salt and pepper.


Toss to evenly coat the vegetables in the oil and seasonings.


If using fresh herbs, sprinkle them over the vegetables.


Roast the vegetables in the oven for 25-30 minutes, or until they are tender and golden brown around the edges.


Serve immediately, garnished with additional fresh herbs if desired.
