Ingredients:

  • 1 tablespoon ___________minced garlic
  • 1 cup __________________vegetable broth
  • 2 tablespoons__________ soy sauce
  • 1 tablespoon___________ cornstarch
  • 2 tablespoons__________ water
  • 4 boiled ________________ eggs
  • 2 cups _________________cooked rice



Instructions:


  • Heat the oil in a large skillet or wok over medium-high heat.
  • Add the onion, bell pepper, and mushrooms to the skillet and cook until the vegetables are tender, about 5 minutes.
  • Add the frozen mixed vegetables and minced garlic to the skillet and cook for an additional 2-3 minutes.
  • In a small bowl, whisk together the vegetable broth, soy sauce, cornstarch, and water.
