Egg Fried Rice"Ingredients:2 cups cooked white rice 2 tablespoons vegetable oil 2 large eggs 1 small onion, diced 1 cup frozen peas and carrots 2 cloves garlic, minced 2 tablespoons soy sauce Salt, to taste Instructions: Heat the vegetable oil in a large pan or wok over medium heat. Beat the eggs in a small bowl and add them to the pan. Cook until they are set, stirring occasionally. Add the diced onion, frozen peas and carrots, and minced garlic to the pan. Cook until the vegetables are tender, about 5 minutes. Stir in the cooked white rice and soy sauce. Cook until the rice is heated through, about 5 minutes. Season with salt to taste and serve. Optional additions: You can also add diced chicken, beef, shrimp, or tofu to the pan for protein. You can also use other vegetables, such as bell peppers, corn, or green beans, in place of or in addition to the peas and carrots. You can also add some diced fresh herbs, such as cilantro or green onions, for additional flavor. |
