Lentil Soup Recipe

Ingredients:


  • 1 cup _____________dried lentils, rinsed and picked over
  • 2 __________________cloves garlic, minced
  • 1 medium_________ onion, diced
  • 1 medium _________carrot, diced
  • 1 medium_________ celery stalk, diced
  • 1 medium_________ potato, diced
  • 1 tablespoon______ tomato paste
  • 6 cups _____________water
  • 1 __________________bay leaf
  • 1 teaspoon ________dried thyme
  • Salt and pepper ___to taste


Instructions:


  • In a large pot, heat some oil over medium heat. Add the garlic, onion, carrot, celery, and potato and cook until the vegetables are softened, about 5-7 minutes.
  • Stir in the tomato paste and cook for an additional minute.
  • Add the lentils, water, bay leaf, and thyme to the pot and bring to a boil.
  • Reduce the heat to low and simmer, covered, until the lentils are tender, about 30-40 minutes.
  • Remove the bay leaf and season the soup with salt and pepper to taste. Serve hot.
  • Optional additions: You can also add some diced ham or bacon to the soup for added flavor, or garnish the soup with some fresh herbs or a dollop of sour cream before serving. Enjoy
