  • Chopped Fresh Herbs ________________________________ 1/4 cup

For the dressing:

  • Olive Oil _________________ 3 tablespoons
  • Apple Cider Vinegar ____ 1 tablespoon
  • Dijon Mustard ___________ 1 teaspoon
  • Honey ___________________ 1 teaspoon
  • Salt and pepper _________ to taste

Instructions:

In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion

    • In a separate small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined. Drizzle the dressing over the salad and toss gently to coat. Add the diced avocado and crumbled feta cheese to the salad and toss gently to combine.
